Roast potato salad with dill dressing

 

 

Ingredients:

Roast potato salad with dill dressing

  • 1kg potatoes, cut into bite sized pieces

  • 2 tbsp olive oil

  • 1/2 cup fresh dill

  • 2 spring onions, sliced

Honey & mustard dressing

  • 1 tbsp apple cider vinegar

  • 2 tsp honey

  • 2 tsp wholegrain mustard

  • 1/4 cup extra virgin olive oil

Method:

Step 1
Preheat oven to 200°C fan forced. Place potato in oven dish. Add oil, season with salt and pepper to taste. Toss to combine

Step 2
Roast for 20 minutes, toss and return to oven for about 20 more minutes or until golden. Set aside to cool

Step 3
Meanwhile, make honey & mustard dressing: Place apple cider vinegar, honey, mustard and oil in a bowl. Season with salt and pepper. Whisk till honey has dissolved and well combined

Step 4
Place potato, dill and spring onion in a large bowl. Drizzle dressing over potatoes and gently toss to combine.
